type='text'>回味 3 -- 台灣之旅</title><content type='html'>回高雄覺得天氣很熱﹐實在是太喜歡了﹗我好喜歡這種熱熱的天氣﹐天天穿短褲短袖﹐晒著那烈烈的陽光﹐暫時不要理那什麼黑斑還是會晒黑了﹗在高雄天天吃著台灣那香甜多汁的蓮霧跟鳳梨﹐還趕上最後一點點牛奶棗子﹐每天喝泡沫奶茶﹐實在是太幸福了~ 就是每天太幸福了﹐吃飯都忘記拍照了~~ ^_^&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;img src="http://static.flickr.com/51/116755735_dcced2ed21.jpg" width="500" height="407" alt="TW-g-onion-B1" /&gt;br /&gt;&lt;br /&gt;&lt;br /&gt;一位網友建議我回高雄一定要試試純發蔥麵包﹐於是我要小妹一定要帶我去買﹐可是&lt;br /&gt;小妹跟姐姐反而建議我要試全國蔥麵包﹐說比較好吃呢~ 所以我決定兩樣都要吃。&lt;br /&gt;^Q^ &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;讓我失望的是買了三個純發蔥包﹐給我吃到那個有頭髮在麵包上面的。&gt;___&lt;  於是&lt;br /&gt;小妹第二天就騎著她的小摩托車﹐帶我去買全國蔥包補償我~:) 可是可愛的小妹竟然繞了好&lt;br /&gt;多個圈﹐都看不到我們的蔥包的蹤影。 (迷路了﹐呵呵~~~ ^____^)&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;隔天姐姐出馬﹐終於吃到了蔥包~ 狠好吃﹗柔軟的麵包加上香香的蔥花﹗ 配上香香&lt;br /&gt;的泡沫紅茶﹐好吃﹗我自己做的麵包什麼時候可以像這樣好吃呢﹖﹗&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;img src="http://static.flickr.com/45/116755736_9102f21df1.jpg" width="500" height="378" alt="TW-g-onion-B2" /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;下面是第一天回到高雄時二姐炒的菜~ 好吃噢~特別是那香煎魠魠魚片﹗還有那用很&lt;br /&gt;多九層塔炒的海瓜子﹐香啊﹗(台灣菜市場的蔥﹐姜﹐九層塔都不用錢的耶﹐用要的&lt;br /&gt;就可以的呢^O^)。住臺灣真的好好﹐好多好吃的海鮮﹐各式各樣﹐任君選擇﹗YUMMY~~~&lt;br /&gt;&lt;br /&gt;又是上海菜~ 其實我是很愛吃它們的麵食點心。特別是蟹粉小籠包﹐好好吃噢﹗^Q^ 但這次去香港讓小妹吃小籠包吃到有點怕怕的﹐真不好意思。呵呵~~ &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;這次只拍了幾道特別的菜﹗吃剩一個的蟹粉小籠包﹐我是怎麼吃都不膩~ ^Q^ 炸得連骨頭都是酥脆的炸小魚~ 我是骨頭都不剩的吃乾淨﹗&lt;br /&gt;魚肉蛋白羹﹐很好喝的一個魚湯﹐清淡得來又不失鮮&lt;br /&gt;甜~ 還有很特別的蝴蝶餅包蜜汁火腿(還有蓮子)。很像台灣的掛包﹐但台灣的比較鹹味﹐這個是甜的﹐蓮子很鬆軟﹐不愛吃蓮子的小妹也很捧場的吃上了幾口﹗蝴蝶餅包著鹹鹹甜甜的火腿﹐很特別噢~ &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br &lt;br /&gt;&lt;br /&gt;我們家是過年也要吃麵包﹗^__^ 看前天做酥餅剩下了豆沙﹐就把拿來做豆沙包吧~ 豆沙我是用CHICK PEA 做的﹐中文真的不知道是什麼。外國人一般用它來做鹹的料理﹐我覺得做甜的也不錯~ 加了黑糖﹐粉香。&lt;br /&gt;&lt;br /&gt;麵包體:&lt;br /&gt;&lt;br /&gt;高粉﹕230G&lt;br /&gt;&lt;br /&gt;低粉﹕40G&lt;br /&gt;&lt;br /&gt;天然酵母﹕50G(我不小心倒了80G)&lt;br /&gt;&lt;br /&gt;乾酵母﹕1G&lt;br /&gt;&lt;br /&gt;砂糖﹕50G(因為有甜餡﹐減少到30G)&lt;br /&gt;&lt;br /&gt;冰鮮奶﹕130G(多加了天然酵﹐稍微減了10G)&lt;br /&gt;&lt;br /&gt;鹽﹕3G&lt;br /&gt;&lt;br /&gt;蛋汁﹕30G&lt;br /&gt;&lt;br /&gt;奶粉﹕10G&lt;br /&gt;&lt;br /&gt;鮮奶油﹕25G&lt;br /&gt;&lt;br /&gt;無鹽奶油﹕30G&lt;br /&gt;&lt;br /&gt;加了鮮奶油的麵包好好吃噢^(OO)^ 晚上在外面吃了簡單的一頓﹐卻已經有團圓的意義了~~&lt;br /&gt;&lt;br /&gt;回家打電話給家人拜年~ 時差問題已經是亞洲時間的年初一~ 問爸媽媽在做什麼~ 爸說媽在煮湯圓呢﹗我怎麼忘記了﹐小時後每年初一早上都是吃湯圓的~ 團團圓圓﹗數數手指已經有十年沒有回家跟家人過農曆年了~ 希望明年可以﹗&lt;br /&gt;&lt;br 新養了一瓶橘子酵母﹐剛好來試試做麵包﹐活力還不錯噢~&lt;br /&gt;&lt;br /&gt;其實自從上次烤硬麵包烤到玻璃碗破掉導致烤爐有點“秀逗”﹐還燙到手掉皮後﹐烤麵包都不敢開到太高溫﹐這次就找了大鐵盤來裝冰塊﹗烤的時候還戰戰兢兢的。幸好安全度過~~&lt;br /&gt;&lt;br /&gt;&lt;a width="432" height="324" alt="bread-fried-steam-bum2" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;剛過去的週末做了兩次水煎包。好好吃噢﹗那皮兩面煎得香香的﹐一口咬下那蓬蓬的皮﹐加上香濃的肉汁﹐還有脆脆的高麗菜﹐真是享受﹗﹗&lt;br /&gt;&lt;br /&gt;發現煎水煎包一定不能大火﹐只能用中慢火﹗不然包子的皮會焦掉噢﹗還有就是要皮薄餡多﹗記得加水後要燜夠﹐不然餡會不熟~ &lt;br /&gt;&lt;br /&gt;用高麗菜做包子真的很好吃﹗第二次用了大白菜﹐遜色很多呢~ &lt;br /&gt;&lt;br /&gt;包子皮的部份第一次250G的粉我加了60G的老酵(相對水跟乾酵的份量減少)﹐第二次沒有加﹐加了老酵的包子比較香噢~ /&gt;第一次玩糖﹐覺得好好玩噢﹗而且覺得很不可思議﹐原來糖果是這樣做的﹗﹗現在才知道煮糖到130度要好久﹗一開始我還以為我是買到過期的麥芽糖﹗後來看到溫度以烏龜的速度爬升﹐才放下心來~ ^_^&lt;br /&gt;&lt;br /&gt;這次我是煮到130度到135度中間(我家的溫度計不是很精確) ﹐覺得太軟了。可能是我跟我老公都不是很喜歡吃太軟的糖果吧。過兩天再來重做~&lt;br /&gt;新年將到﹐我就會想到家裡新年一定吃的蘿蔔糕。就會想到我姑姑。我們家以前從來不用買這些中式賀年食品﹐因為我姑姑的手藝很好﹐她都會做蘿蔔糕﹐芋頭糕跟馬蹄糕分給她的哥哥弟弟妹妹家裡人吃。一做就是十幾二十幾盤。而每次我從加拿大回去﹐我姑姑都會做我最愛吃的蘿蔔糕跟肉粽給我吃。&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;可是上一年我回去﹐卻沒有。我以為姑姑不知道我回來了﹐就問我媽說去姑姑家玩~(其實是貪吃想去跟姑姑報到)。可是媽說姑姑的三個兒子跟姑姑的所有兄弟妹妹都鬧不和了﹐最好不要去.&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;哎。。。為什麼大家都是一家人﹐就要這樣呢﹐前一陣子又說伯父跟誰跟誰吵架。大家都是同根生﹐有親也有情啊。。。&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;後來我生病在醫院﹐姑姑來看我﹐我真的好高興好高興。他們不和不關我們的事啊~ 我希望下次回去還可以吃到姑姑親手做的蘿蔔糕。&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;在國外就是沒有過新年的氣氛﹐卻有種想家的感覺。。。做個愛吃的蘿蔔糕吧﹐雖然沒有姑姑做的好吃﹐但可以拿來解解鄉愁。&lt;div /&gt;昨天晚上的快速晚餐。以前勤勞的時候還會買蕃茄回來自己做醬﹐加自己喜歡的香料。但現在不是蕃茄的季節﹐粉貴。而且加上懶惰﹐就直接去超級市場買一罐罐調好味的醬囉。麵也是買新鮮的。覺得新鮮的比乾的好吃~  &lt;br /&gt;&lt;br /&gt;喜歡的肉類跟洋蔥和蒜頭炒一炒﹐加上醬煮滾﹐放熱水燙過的麵﹐再放其他蔬菜煮熟﹐加調味就可以上碟囉~ 灑上起司粉就很香了~&lt;div width="432" height="324" alt="cakeblueberrymousecake" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;慕斯蛋糕一直是我想嘗試做的蛋糕﹐覺得看起來細細嫩嫩滑滑的﹐看了就很想吃。在外面喝咖啡的時候每次都很想買一塊來過過口癮﹐都會想到﹐不是要自己試做看看嗎﹖﹖ 就都忍住。&lt;br /&gt;&lt;br /&gt;這次終於買齊材料。開始動手做﹗食譜是按照食譜是CHERRY的奇異果慕斯. 好吃噢~ ^Q^ 謝謝CHERRY的美味食譜~&lt;br /&gt;&lt;br /&gt;第一次做﹐怕失敗﹐份量減少了。後來才發現不應該減的﹗慕斯跟蛋糕拼起來後覺得模斯很小氣﹗只有薄薄兩層。下次可以改進~&lt;br /&gt;&lt;br /&gt;用橘色地瓜做的麵包捲。包了地瓜餡。很想請問大家為什麼麵包上面會有小泡泡出現呢﹖這次麵包不知道是不是因為懶﹐沒有把燕麥煮過﹐麵包看起來很粗造。但吃起來還OK﹐地瓜很香。&lt;br /&gt;&lt;br /&gt;昨天做的法國麵包棒沒有烤上色就拿出來﹐因為發生了很危險的情況﹐為了產生蒸汽﹐放冰塊的時候碗暴了﹗嚇死我了。。。可能是烤爐的時鐘的IC版被蒸汽蒸壞了﹐不動了﹐老公努力的搶修﹐也不行了。 幸好烤爐跟爐子沒有壞。。。&gt;_____&lt;&lt;br /&gt;&lt;br /&gt;老公說﹐一條法國麵包在外面買才一兩塊錢﹐烤爐壞了要上千塊呢﹗﹗﹗ src="http://static.flickr.com/42/81068708_967f45b7ca.jpg" width="432" height="324" alt="bread-Ciabatta" /&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;其實我對天然酵母很情有獨鐘。越老的越愛。 上次因為要回亞洲﹐把我養了半年多的酵母給放棄了﹐很心疼。回去後嘗試養過幾次﹐都沒有成功。害我那時候還很厲害的說要教我媽怎麼養﹐卻被我媽疑問﹕你確定這樣子真的可以做麵包﹖怎麼都沒看你做出來過﹖﹖讓我在媽媽面前出醜了。 ^___^”&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;回加國後一切恢復正常﹐拿起我的瓶瓶罐罐﹐又開始養了起來。這次配了杯“飲料”。台灣的“蜂蜜高山烏龍茶”酵母。 酵母很活躍﹐但是就是顏色不是很討好。烏龍茶是有顏色的﹐養出來的酵母是灰色的。做出來的麵包是灰色的。還在考慮要不要重養﹐但卻很喜歡它那活躍性。也是因為花了心血﹐不捨得呢~ &lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;不知道是不是我味覺有問題﹐我個人覺得用不同材料養出來的酵母只是一開始味道有點差異﹐養久了味道都是一樣。但越老的酵母味越香~ 而顏色呢﹖不知道會不會養久了﹐用多了﹐顏色會變回白色呢﹖ ^___^&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;參考CD家的食譜做了這個拖鞋麵包~ 香脆好吃噢~  ^Q^&lt;br /&gt;&lt;br 我這裡沒有上下火分開調。每次不是上面烤不夠就是底部也黑了。溫度啊溫度﹐真的很難調&gt;_&lt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;很想再做﹐但是已經被老公否決了﹐因為我們冰箱已經很多蛋糕捲了。哎﹐還是等吃完再試吧。。。&lt;br /&gt;&lt;br /&gt;但這個蛋糕捲很好吃~ 應該很快就解決完了吧~  ^Q^&lt;div /&gt;昨晚蒸了紫地瓜﹐做了麵包。卻因為在忙著煮飯﹐忘記了它﹗看起來覺得發酵有點過頭。味道還是很香﹐就是口感沒那麼柔軟。&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;今天中午試了Lisa介紹的蘿蔔絲包包子﹐因為第一次用白蘿蔔包包子﹐用的份量比較少﹐肉肉比較多。很意外﹐真的很香~ 下次試試放多一點~ ^_^ 好吃﹗&lt;br 普通的香草威風﹐中間夾我最愛的梅子優酪乳﹐還有嚇死人便宜的櫻桃(很驚訝﹐冬天有櫻桃﹗) 等平安夜來切蛋糕囉~&lt;br /&gt;&lt;br /&gt;今天去家附近的超級市場看到一個很好玩的景象﹐食物都被買光光﹗鮮奶油被買光光﹔蛋被買剩幾盒﹔麵包剩幾條﹔幾天前看到堆成山的火雞被一掃而空﹗那些水果蔬菜肉類都所剩無幾﹗好誇張~ 聖誕節大家都這麼瘋狂嗎﹖&lt;br /&gt;&lt;br src='http://photos1.blogger.com/img/78/2894/320/BreadPotatogarlic.jpg'&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;其實我是烘培的新手, 所以網路上很多烘培高手做過的點心麵包, 我都沒有做過, 就是因為這樣, 看到大家的各種各樣的點心麵包, 看到一直流口水之外, 還會手養養, 很想每一樣都要學著做. 但欲速則不達, 很多事情都要慢慢來的啦~&lt;br /&gt;&lt;br /&gt;以前有看到大家有用麵包碎放在麵包上面烤, 我一直很好奇. 我知道用麵包碎烤雞炸肉會很脆很香, 用來烤麵包應該也會脆吧? 一直想試試看, 但一直輪不到它, 因為想要做的麵包太多了... 昨天終於達成願望, 真的不負眾望, 真的脆卜卜滴~~ 很不錯噢~ 唯一不好的是會掉到滿桌都是碎碎..^-^"&lt;br /&gt;&lt;br /&gt;提一下是麵包裡面是包馬鈴薯泥+起司粉+奶油+蒜頭碎+胡椒和鹽.. 很香, 可是蒜頭碎切太大粒, 有點嗆. 我覺得很辣很爽! 但家裡的"機車"先生又說早上吃會嘴巴臭臭的了.....&lt;br /&gt;&lt;br /&gt;其實這是外國人晚上吃的馬鈴泥, 他們喜歡把蒜頭粒炒過, 或是整顆蒜頭用FOIL包住放烤爐烤軟, 再把蒜頭泥擠出攪拌進馬鈴薯泥裡, 另一個感覺是我的花生醬有點太水.. 但還是不肯放棄, 就讓它歪歪斜斜的進行第二次發酵.. 最後麵包就變成這個醜樣子啦... 老公說像一陀米田共... &gt;.&lt;&lt;br /&gt;&lt;br /&gt;但是呢, 不能小看這個米田共!! 它真的香得不得了. 烤麵包的時候整個屋子都是花生醬的香味. 可能是太久沒吃花生醬了, 覺得它特別美味.. 幸好最近看到大家都在做花生醬的點心, 一直說要學KEONG做她的抹茶紅豆, 終於實現了.. 我覺得抹茶跟紅豆是決配! 而且是湯種的, 很又軟又香~ 我只能把它列入我最愛麵包的目錄裡囉~~ &lt;br /&gt;&lt;br /&gt;麵包剛烤出來我就忍不住吃了一個, 剛出爐的麵包一定是最贊的啦~ 下面那張圖是第二天沒有包紅豆餡的(剩下的紅豆泥不夠). 還是軟軟膨膨的~ 當然, 剛出爐的是沒得比的~ 我想如果要放到第三天的話就要放進冰箱裡了囉~&lt;br /&gt;&lt;br /&gt;吃著第二天軟軟的麵包, 我一直在笑... 老公說我神經病...呵呵, 我是麵包怪~ ^-^ &lt;br /&gt;&lt;br /&gt;&lt;a /&gt;現在一般都是晚上做好第二天的麵包. 但我都覺得早上的麵包沒有晚上剛出爐的好吃, 家裡人就覺得沒什麼所謂, 我是覺得他們只是填飽肚子而已.. 但如果麵包做太多, 再隔一天的話, 口感的差別就更明顯. 所以我都儘量做份量少一點, 希望每天可以吃到軟軟的麵包.... 昨天想說不如再試試看湯種, 看有沒有比較好.&lt;br /&gt;&lt;br /&gt;麵包我沒有冰進冰箱, src='http://photos1.blogger.com/img/78/2894/320/MafanOrange.jpg'&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;上次老公因為咳嗽﹐買了一瓶柚子蜜。聽說可以化痰止咳。沒事拿來喝﹐也可以滋潤喉嚨~ 但老公喝過幾次後就沒有人喝了﹐家裡也沒有人想打開冰箱拿來泡。我就決定拿來做蛋糕。&lt;br /&gt;&lt;br /&gt;之前有看過網友QUEENIE做過柚子蜜蛋糕﹐但她是做威風蛋糕﹐我的威風和海綿還在努力練習中﹐只能把食譜抄下來﹐等我的功力好一點再試了。&lt;br /&gt;&lt;br /&gt;這個小蛋糕我是按照我家的書&lt;a href="http://www.amazon.com/exec/obidos/tg/detail/-/B0006924X6/002-8969249-6098425?v=glance"target="_blank"&gt;&lt;The Practical Encyclopedia of Baking&gt;&lt;/a&gt;的橘子蛋糕食譜做的﹐只是稍微改了一下。&lt;br /&gt;&lt;br /&gt;低粉﹕170G&lt;br /&gt;泡打粉﹕1+1/2小匙&lt;br /&gt;鹽﹕1/8小匙&lt;br /&gt;奶油﹕115G&lt;br /&gt;糖﹕115G (改成﹕4大匙柚子蜜)&lt;br /&gt;橘子皮碎﹕1個 (改成﹕無)&lt;br /&gt;蛋﹕2個&lt;br /&gt;牛奶﹕2大匙 (改成﹕2大匙溫水)&lt;br /&gt;&lt;br /&gt;-- 柚子蜜加溫水溶解﹐把柚子蜜裡的果皮夾掉 (這個步驟是我自己多加的。)&lt;br /&gt;-- 電動打蛋器打發奶油﹐加糖和橘子皮碎(沒加橘子皮碎﹐改成加入柚子蜜水)。繼續打發。&lt;br /&gt;-- 蛋一個一個打入。然後卷入麵粉。拌勻。八寸模﹐180度烤30分。(改成6個小蛋糕﹐烤了18分)&lt;br /&gt;&lt;br 甜麵糊裡有加香草精呢﹐所以外皮很香。我不知道我做的對不對﹐因為沒有在外面買過(改天買個來吃對比看看)。圖的右下角那張是麵包進烤爐之前﹐我是第一次在麵包上擠面糊﹐手腳有點笨﹐面糊擠得亂七八糟的﹐而且我覺得我的甜麵糊擠得不夠多﹐不然就是我手腳太慢﹐都流下來了。。有三個加了黑芝麻和南瓜籽~我看MIRU是麵包配鮮奶油跟水果吃的... 但昨天麵包出爐不久就被家裡人吃光光了﹐而且是晚飯過後﹗。。^OO^ /&gt;春天到了﹐好多又甜又嫩的蔬菜都出來了。這兩天發現蘆筍便宜就算了﹐還好甜好脆。連續吃了兩天。還有好吃的絲瓜呢﹐以前我媽煮的上湯絲瓜蛤蠣最令我流口水了﹐又清又甜﹐配上海鮮﹐一級棒﹗還有就是蒜蓉姜絲清炒﹐也是一流。我就沒有我媽的好手藝﹐就只能隨便炒炒啦。&lt;br /&gt;&lt;br /&gt;&lt;a src='http://photos1.blogger.com/img/78/2894/320/coconutBread.jpg'&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;麵包表面沒有刷蛋汁﹐所以表面看起來很粗燥﹐烤麵包的時候剛好在煮飯﹐忙起來什麼都忘了。。上次做的地瓜餡小麵包加了椰子絲覺得很好吃﹐就想再回味一次。。&lt;br /&gt;&lt;br /&gt;麵包體﹕&lt;br /&gt;高粉﹕300g&lt;br /&gt;酵母： 6g&lt;br /&gt;奶粉： 1大匙&lt;br /&gt;糖： 1。5大匙&lt;br /&gt;鹽： 2.5g&lt;br /&gt;溫水： 160cc&lt;br /&gt;蛋﹕50g&lt;br /&gt;奶油： 15g&lt;br /&gt;&lt;br /&gt;餡﹕&lt;br /&gt;地瓜泥﹐奶油﹐黃糖﹐椰子絲﹕各適量&lt;br /&gt;&lt;br /&gt;面包体的所有材料（奶油除外）揉成一團，加入奶油再揉成光滑面團，放進碗蓋好, 在溫暖地方發酵2小時。拿出分割，蓋布松弛10-15分鐘。再包入餡就可以進行最后發孝了：溫暖濕潤地方發酵1小時。預熱烤爐180度烤15分。&lt;br /&gt;&lt;br /&gt;Note:&lt;br /&gt;做完這個麵包後我才看到KEONG的留言﹐提到我的麵包看起來蠻紮實的。我也覺得是。說真的我們家的人很好養﹐大家餓了什麼都吃。。(提一下特別是我表弟﹐我很高興他都很捧場﹐雖然我做的都不是什麼好料的~). 之後我真的認真跟大家培烘高手的成品對比了一下﹐真的差很多耶。總結出幾個我的麵包不夠軟的原因﹕&lt;br /&gt;&lt;br /&gt;1。可能是我做麵包很多時候都沒有完全按照食譜。都是跟著自己的感覺去做而已﹐太干就多加點水﹐太濕就多加點粉。像上面麵包的160CC的水就只是大概﹐而上一篇的咖喱麵包﹐雖然是有食譜﹐但也沒有認真去量﹐粉跟水比例也是大概。下次要改進。看來要做好吃的點心麵包就要認真點﹐不能隨便了。&lt;br /&gt;&lt;br /&gt;2。可能是我都放進大烤爐里幫助發酵﹐之前有預熱一點溫度﹐也有放一碗熱水﹐每次出來麵團都覺得干掉一點。(這個應該可以改進﹐不要懶惰﹐隔一段時間就來幫麵團噴水﹖)&lt;br /&gt;&lt;br /&gt;昨天做的面包里面包了三种不同口味的地瓜餡，原味，巧克力（巧克力豆塞在地瓜泥中間），和耶子。地瓜泥都先加了一點奶油和黃糖。其實我本來是想包三种不同的材料，像地瓜，紅豆泥和巧克力。但蒸完的地瓜就覺得地瓜泥好多哦，剩了又要想辦法用掉它，就決定全部都包地瓜了。 小面包切開后看不是很出來有三种口味，但吃起來三种口味都很分明，最好吃是椰子的，很香~&lt;br /&gt;&lt;br /&gt;02082002_1.html"target="_blank"&gt;搔耳朵麵包&lt;/a&gt;耗時間了。前兩天我已經學著&lt;br /&gt;在養&lt;a href="http://leilako.com/recipes/western/02012002_1.html"target="_blank"&lt;br /&gt;&gt;酸味酵頭&lt;/a&gt;，但家里沒有速發酵母，我就用了傳統的干酵母。因為是第一次試養，&lt;br /&gt;只用了半小匙酵母加一碗水試試看。養了兩天就拿來用了。搔耳朵麵包做的方法跟&lt;br /&gt;KO差不多，但份量有點改變而已。我加了豆漿代替了水。面包黑黑的，是加了打成&lt;br /&gt;糊的核桃仁（因為老公不愛吃，只能這樣子騙他吃了）。&lt;br /&gt;&lt;br /&gt;Note:&lt;br /&gt;- 因為酵母不多，但又要做兩條大辮子，所以我的發酵時間加長了：第一次2小時, 第二次4小時，第三次1小時。第一次“綁”辮子面包，第一條綁得有點丑。：P&lt;br /&gt;- 面包發酵得很均勻，不知道是不是酵母不多，沒什么酵母的酸味耶~ &lt;br /&gt;- 吃起來面包很有嚼勁。很香的豆漿味，完全沒有核桃的味道（哈哈~ 騙過去了.)&lt;br /&gt;&lt;br /&gt;我自己本身很喜歡吃有嚼勁的面包，但做這面包要用好長的時間哦..真的要找一天&lt;br /&gt;沒事做的時候才行。&lt;br /&gt;&lt;br /&gt;今天終于沒雪了耶~可是當我剛踏出門而已，我留在半空中的鼻涕竟然有點結冰結冰&lt;br /&gt;的，真的是只有2-3秒而已哦..(不要說我惡心~）&lt;div src='http://photos1.blogger.com/img/78/2894/320/IMG_1404b.jpg'&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;家里的馬鈴薯跟地瓜都要用掉了，最后還是先挑了馬鈴薯，因為覺得它有發芽的趨勢。這次做了很朴素的面包。&lt;br /&gt;&lt;br /&gt;先把馬鈴薯蒸熟壓成泥待用&lt;br /&gt;&lt;br /&gt;高粉：1杯&lt;br /&gt;麥粉：半杯&lt;br /&gt;水+干酵母+一點糖：1碗（飯碗）&lt;br /&gt;馬鈴薯泥：3大匙&lt;br /&gt;鹽：1小匙&lt;br /&gt;橄欖油：10g&lt;br /&gt;&lt;br /&gt;酵母水靜待10分。除橄欖油，全部揉成面團，再分兩次加入橄欖油揉成光滑面團。第一次發酵1小時。分割滾圓松弛15分，杆平包入馬鈴薯泥（加了鹽，蔥花和白胡椒）。第二次發小酵45分。180度烤15分（進烤爐前噴水）。&lt;br /&gt;&lt;br /&gt;我覺得包在里面的馬鈴薯泥加點火腿玉米起司什么的會更好吃，但家里就沒有這些材料，真可惜。&lt;div /&gt;整天做蒸包饅頭，我好像很久沒有烤面包了，不偶爾練習一下會忘記怎么做。。。果然，技術退步很多，烤出來的面包外皮皺皺的，是為什么呢？是我烤爐一開始的溫度不夠嗎？幸好口感還不錯吃。這是普通甜面團，加了葡萄干。我是用中种法，烤箱預熱170度后烤了15分。。。大家知道是什么問題嗎？？哎呀，還是赶快去別人的网站偷偷師才行。。。&lt;div src='http://photos1.blogger.com/img/78/2894/320/CurryBb.1.jpg'&gt;&lt;/a&gt;&lt;br /&gt;&lt;br /&gt;那天在Keong家看到好吃的咖喱雞，有點怀念咖喱的味道，就想到了這個面包。記得我的“手制面包DIY"這本書有這個食譜，就做了起來。揉面的時候我覺得很奇怪，我還是第一次在面團里加咖喱粉。。&lt;br /&gt;&lt;br /&gt;面包体：&lt;br /&gt;高粉： 230g (改動后：250g）&lt;br /&gt;豆腐渣： 20g （改動后：無）&lt;br /&gt;孝母： 5g&lt;br /&gt;咖喱粉： 7g （改動后：12-15g）&lt;br /&gt;奶粉： 1大匙&lt;br /&gt;糖： 9g &lt;br /&gt;鹽： 2.5g &lt;br /&gt;溫水： 160cc&lt;br /&gt;奶油： 10g&lt;br /&gt;&lt;br /&gt;餡：&lt;br /&gt;洋蔥: 150g&lt;br /&gt;絞肉： 200g&lt;br /&gt;沙拉油： 2大匙&lt;br /&gt;小麥粉： 2大匙（改動后：無）&lt;br /&gt;咖喱粉： 1.5大匙&lt;br /&gt;鮮奶： 100cc&lt;br /&gt;&lt;br /&gt;面包体的所有材料（奶油除外）揉成一團，加入奶油再揉成光滑面團，放進碗在38度 C發孝一小時。拿出分割，蓋布松弛10-15分鐘。把內陷炒好備用。把松弛好的面團桿成圓錐形，包入咖喱餡就可以進行最后發孝了：38度C 20分鐘。&lt;br /&gt;&lt;br /&gt;食譜是用油炸的，炸之前還有沾過鮮奶再沾面包碎，我是懶得開油鍋，家里又沒有面包碎，就都省略了。直接近烤爐烤，180度C烤15分鐘。但不用講，用炸的一定比較好吃！！&lt;br /&gt;&lt;br /&gt;&lt;a href='http://photos1.blogger.com/img/78/2894/640/CurryBa.jpg'&gt;&lt;img border='0'
